WEEKLY WINEMAKER

Every week, vintners, brewers and chefs take over the bar. We take pride in bringing our relationships to you, first. Let Cadet be your weekly party. #WineMakerWednesday

Planetary Pioneer

You can’t mention responsible farming practices in Paso Robles without Tablas Creek entering the conversation. Their 270-acre estate is #farminggoals, having become the world’s first Regenerative Organic certified vineyard. They even care for their own adorable herd of sheep and alpaca. Long time Tablas Creek team member Darren Delmore will be here sharing delightful incarnations of Grenache, Syrah, Mourvedre, Counoise, and Vermentino, and perhaps even some stories about all the baby lambs born at their thriving estate this season. Ewe can’t miss this!

Truly Californian

Michael Cruse is devoted to producing incredibly drinkable, California table wines, described as intensely loyal to their origins. He does this, under his label Cruse Wine Co., by sourcing grapes from distinctive vineyards, planted to unique varieties such as Valdiguie, Carignan, Tannant, and St. Laurent, and showcasing the lifted qualities of the fruit as a part of a field blend or single-varietal wine —often with bubbles. Known for his gift for making things that sparkle, Michael is many things: a scientist, winemaker, and deep well of knowledge. Come pick this Californian’s brain over a flight of his easy-drinking wines.

Napa's Hidden Gem

We’re so pleased to welcome Julie Johnson, a Napa Valley treasure and consummate caregiver to all that inhabit her picturesque land — sheep, guinea fowl, happy dogs, fruit trees, grape vines, and, of course, the wines she produces for her label Tres Sabores. Julie will be working the room, pouring springtime delights like Picpoul Blanc, Sauvignon Blanc, and Cab Franc. Julie says, “essential to the enjoyment of her wines is the company with whom you drink.” We know this community to be stellar company so let’s show Julie and her wines some love!

Listen to the Madame

Madame Elisabeth Bollinger famously said of Champagne, “I drink it when I’m happy and when I’m sad… Otherwise I never touch it, unless I’m thirsty.” We deeply connect with the Madame’s words, and we’re ready to satiate your thirst with flights of Bollinger Rosé, Special Cuvee, and more. Bollinger is one of the great families of Champagne. With nearly 200 years of family heritage and vineyards in the heart of the finests crus of the region, they know how to craft bubbles with balance. Whether you’re happy, sad, and/or thirsty, we’ve got you covered!

Je t'aime Soléne

A love story that began in France and was solidified in California’s Central Coast formed the passionate beginnings of Clos Soléne. Guillaume Fabre grew up on a vineyard in Languedoc-Roussillon, but had his sights set on California. He and his wife Soléne moved to the states in 2007 and now farm a 28-acre estate on the west side of Paso Robles, where they raise their three children. (Idyllic!) Guillaume will be here sharing his Rhône-inspired wines and enchanting us with tales of his American dream realized.
